parmesan mayo chicken bake


The other day, I was watching TV and there was an ad for mayonnaise. It was 30 seconds quick recipe, but it looked so good. We also had left over mayo sitting in the fridge so this recipe was perfect! It was very easy to make and it turned out quite good (even though the skin didn't turn out perfectly. haha). It's always fun (and anxious) to try new recipes. If you have any fun recipes, please share it with me!

Ingredients:

Chicken breasts - 4 (boneless, skinless)

Mayonnaise - 1 cup (American mayo)
Parmesan cheese - 1 cup (grated)
Salt & Pepper - to taste

Italian bread crumbs - 1 1/2 cup (*see TIPS)

[Chicken seasoning]
Salt - 1 tsp
Black pepper - 1 tsp
Paprika - 2 tsp













Prep:


  1. Make few slits on chicken breasts. Marinade with chicken seasoning and keep it in the fridge for 30 min - an hour. 
  2. Mix mayo, cheese, salt & pepper together in a bowl. 
  3. If you are using Japanese breadcrumbs, add in the breadcrumbs together with 2 tsp Italian seasoning, 1 tsp paprika and 1 tsp of your favorite herbs. Blend it until very fine and integrated.

Season it

Cook:

  1. Dip each chicken breast in mayo/cheese mixture. Then roll on the breadcrumbs. Make sure it's all covered by bread crumbs. Repeat for all. Place them in a oven-safe dish. 
  2. Bake for 20-25 minutes. 

Bake for 20-25 minutes

Serve:

  1. Let it sit in the oven-safe dish for 5 minutes before serving. 

TIPS

  • For crispier crust, put in the broiler for few minutes. But watch the meat - it cooks real fast. 
  • Try cutting the biggest chicken breast to make sure it's cooked inside.

whole wheat vegetarian pizza


My friend taught me how to make this amazing vegetarian pizza. The whole wheat crust is very light, so you don't feel 'heavy' after eating the pizza. If you love thin crust pizza, this is a must-try! My daughter and my friends' children loved it so it'll be a big hit for your whole family. It's good to have friends who can cook. :)

Ingredients:

[Pizza dough]

Whole wheat flour - 2 1/2 cups
All purpose flour - 1 cup
Dry active yeast - 2 packages (4 and half tsp or 0.5 oz)
Salt - 1 tsp
Sugar - 1/2 tsp
Lukewarm water- 1 and 1/2 cups
Olive oil - 1/2 tsp

[Homemade Pizza sauce]

Tomato paste - 1 can (12oz)
Tomato sauce - 1 can (16oz)
Italian seasoning - 2 TBS
Onion - 1 small (diced)
Garlic - 2 cloves (minced)
Sugar - 1 TBS
Salt - pinch
Olive oil - 2 TBS

[Toppings]

Mushroom - 1 package (about 10 mushrooms)
Bell peppers - 2 (your choice of colors - red, orange, yellow or green)
Olives - 1 can (as much as you want)
Onion - 1 med
Mozzarella cheese - a lot















  

 

Prep:

  1. Make the pizza dough:
    • In a bowl, combine sugar, yeast and lukewarm water. Let it stand for about 10 minutes.
    • Add in flour, salt and olive oil with the yeast mixture.
    • Knead (using Kitchenaid mixer or your hands) for 10 minutes. 
    • Let it sit and rise for about an hour. 
  2. Make homemade pizza sauce (See TIPS)
    • Over medium heat, saute onion in olive oil until light brown.  
    • Stir in remaining ingredients and bring to boil.  
    • Lower heat and simmer until desired thickness.
  3. Cut all veggies in bit size pieces/slices.

Cook:

  1. Preheat the oven to 500 degrees F.
  2. When the dough is ready, take the desired amount of dough and using your hands and fingers, stretch the dough to about 0.5cm (0.2 inch) thick on a floured surface. Make sure the dough is evenly stretched. You can use your knuckle to stretch it out.
  3. Spread on the pizza sauce.
  4. Put the cheese on top of the sauce, followed by the toppings. Put more cheese on top.
  5. Bake in the oven for 12-13 minutes.




Serve:

  1. My friend served the pizza with yummy fruit smoothies. 

TIPS

  • You can make the pizza sauce few days in advance.
